Football Sundays always remind me of my Grandfather. He was the biggest San Francisco 49ers fan. I have fond memories of him in his SF sweatshirt watching the game in “his chair.” It’s why I still have Red & Gold fever in the fall! While the chicken cooked, I sliced up a couple fresh red bell peppers, yellow bell peppers, and white onions. Once the chicken was done (check the temperature to make sure they are fully cooked), I sautéed the veggies in the same pan, which gave them extra flavor from the leftover bits and pieces in the pan.
