Now that we’ve been back in school for a few weeks, we’ve finally adjusted back into a regular routine. It’s amazing how quickly our day fills up with work, school, ballet classes, piano lessons, church activities, homework, and household chores. Was I supposed to fit meals in there somewhere? As you can see, this lovely dish was easily prepared and served in under 30 minutes. It made my family happy because they got a taste of take-out and I was happy because it was super-easy and a healthy alternative to said take-out.
